What are the dimensions of the light themselves? The pictures show two lights spanning a chair, but the dimensions would suggest smaller.

I don't have an answer for you ...as I replaced a chandelier that had only one light bulb in it with the 3 -light Dining room hanging light ...
It says the pendants are adjustable is there a minimum / maximum length?
it can be adjusted as short as you can to the lamp holder. pls see the dimension picture on the product detail page for the maximum length.
Can this be used outdoors if covered? Also can this be used on an angled ceiling?
I can't answer the outdoors but I don't really see why not if it's covered and the electrical wires in the wall/behind it stay dry. I have it installed on an angled ceiling with no issues. The pendant height for each one can adjust to whatever length you prefer so it works great on an angled ceiling.
Is cage removable?

What size light bulbs do you recommend? i see e26 base. i recently bought g40 but those are round.
